OVERVIEW

Terre del Dogado is born from the passion of the Sabbadin Brothers Marco, Silvia and Luigi for the viticulture. This passion, passed by their father Guido and the numerous farmer parents, has led to give life to a project that carried to the grapes’ selection for the production of the firsts wines Terre del Dogado.

The Sabbadin Brothers, professional sommeliers, chosen the collaboration of the famous oenologist Domenico Sandri for the realization of this project, whom with his thirty years of experience, brought several Italian wineries to reach the excellence.

Terre del Dogado specializes, therefore, in the production of high quality wines from Veneto, in particular from the most historical production areas: Amarone della Valpolicella Classico DOCG, Valpolicella Ripasso Classico Superiore DOC, Soave Classico DOC, Bianco di Custoza DOC and Prosecco DOC Treviso, all of them coming from the heart of their respective denominations.

The production and wine-making processes are the perfect blend of tradition and technological innovation: a match that creates an innovative reality but careful to generations of experience.

In this way Terre del Dogado is able to offer high quality wines which can express all the territory’s and grapes’ potential through their flavors and fragrances; moreover it is the right way to leave a sign in the memory of those persons who have the chance to taste them.

The brand chosen by the Sabbadin brothers shows the two columns of San Marco and San Todaro which represent the entrance in Piazza San Marco, the Venice’s most representative place.

Terre del Dogado (which means Doge’s Lands) is synonym of Veneto’s Lands; territories that were governed by the Serenissima Republic for over 1000 years, from the VI century to the 1797, and included most part of Veneto and of its neighboring lands.

TERRE DEL DOGADO WINES

AMARONE DELLA VALPOLICELLA CLASSICO DOCG

TIPOLOGY

Dry Red Wine

GRAPES

30% Corvina, 35% Corvinone, 35% Rondinella

VINIFICATION

Produced with selected grapes situated in hill vineyards which are located at 200-350 mts above the level of sea on calcareous-eocene terrain in the heart of Valpolicella. Bunches are hand picked and rigorously selected at the end of September, then the traditional natural drying of the grapes starts and keep for about 100 days till January, with a natural lose of 35-40% of the weight; after that starts the soft pressing of the grapes, followed by a maceration on the skins of 30 days. 60% of the wine is refined for 24 months in big Oak barrels, and 40% of the wine is refined for 18 months in new French barriques from Allier oak, then 6 months in the bottle.

TASTING NOTES

Aspect: Intense ruby red with garnet tinges.

Bouquet: Complex, intense with hints of ripe red fruit, cherry, bitter almond and vanilla; after a little aeration you can feel tertiary and evolved aromas such as tobacco, black pepper, cinnamon and other spices.

Taste: Dry and powerful palate, mouthfilling, structured with a balanced and persistent ending.

VALPOLICELLA RIPASSO CLASSICO SUPERIORE DOC

TIPOLOGY

Dry Red Wine

GRAPES

80% Corvina e Corvinone Veronese, 20% Rondinella

VINIFICATION

Produced with selected and hand picked grapes situated in hill vineyards which are located at 200-350 mts above the level of sea on calcareous-eocene terrain in the heart of Valpolicella. Vinification of fresh grapes, followed by a 10 days maceration on the skins. The wine remains in stainless steel and cement tanks till February. Then it referments (Ripasso technique) on the fresh marks left over from the just completed Amarone fermentation. In this way the wine becomes more complex and structured. After that, the wine is refined for 12 months in big Slavonian barrels of 50 hl, and then for 6 months in the bottle.

TASTING NOTES

Aspect: Intense ruby red, limpid.

Bouquet: Clean, intense and complex with hints of fresh and ripe red fruit, and after a little aeration, delicate spices aromas.

Taste: Dry, soft and mouthfilling, structured and well-bodied with a very pleasant bitter aftertaste.

PROSECCO DOC TREVISO “121° DOXE”

TIPOLOGY

White Sparkling Wine (Martinotti-Charmat Method) – Extra-Dry

GRAPES

100% Glera (Prosecco)

VINIFICATION

Soft pressing of the grapes. The fermentation starts in autoclaves at controlled temperature (not over 17°-18°C) with selected yeasts. The bases forming the cuvée are selected according to strict quality standards of finesse and intensity of the varietal flavors. A long re-fermantation starts at a low controlled temperature and keep for at least 45 days (according to the Martinotti-Charmat Method).

TASTING NOTES

Aspect: Bright straw yellow with greenish tinges, brilliant, nice and abundant foam with optimal persistance; very fine and persistent perlage.

Bouquet: Delicate and intense with pleasant hints of green apple, pear and peach, nuances of white flowers like acacia and jasmine.

Taste: The body is gentle and light, soft and at the same time with an optimal acidity that gives freshness. Fruity and persistent. The fine and delicate perlage caress the palate and the tongue, releasing all the aromas and giving vigor to the taste.

HISTORICAL DATA

“Doxe” in the Venetian dialect means Doge; this Sparkling wine today is the Ambassador of our region, like the 120 Venetian Doges were in the past. We decided to invest the charge of “121° Doge” on our Prosecco trying to keep alive the Dogado’s history that governed our territories for more than 1000 years.

SOAVE CLASSICO DOC

TIPOLOGY

Dry White Wine

70% Garganega, 30% Trebbiano di Romagna

VINIFICATION

Produced with selected grapes handly harvested, situated in hill vineyards in the heart of Soave area. The grape harvest occurs at the appropriate moment of the maturation, with the grape still rich of natural acidity and never overripe because in this case all the flavors would burn. Soft pressing and fermentation at controlled temperature. After series of natural decantations the wine is bottled with the cold-microfiltration technique to safeguard freshness, typicality and flavors.

TASTING NOTES

Aspect: Bright straw yellow colour.

Bouquet: Fine, delicate and flowery bouquet, intense with hints of acacia flowers, apple, citrus and mineral aromas.

Taste: Dry and fresh taste, soft and superbly balanced, medium bodied, with a typical bitter aftertaste, persistent.

BIANCO DI CUSTOZA DOC

Dry White Wine

GRAPES

Trebbiano Toscano, Garganega, Tocai Italico, Riesling, Cortese.

VINIFICATION

The grape harvest occurs at the appropriate moment of the maturation, with the grape still rich of natural acidity and never overripe because in this case all the flavors would burn. Soft pressing and fermentation at controlled temperature. After series of natural decantations the wine is bottled with the cold-microfiltration technique to safeguard freshness, typicality and flavors.

TASTING NOTES

Aspect: Bright straw yellow with slightly green tinges.

Bouquet: Fine and intense, pleasantly aromatic, with hints of apricot, peach, citrus fruits and white flowers, elegant.

Taste: Dry and fresh, soft and very well balanced, medium bodied, with an intense and long ending, persistent.
